yumsetti casserole

If there is anything special about midwestern meals is that you can definitely count on them as great comfort foods. This yumsetti recipe is one of my kids’ favorite meals and it is comfort food at its best! There is a bit of prep work with this recipe, but otherwise it is so adaptable (can be made as a casserole or in the crock pot) and perfect to make ahead so when dinner time rolls around, your meal is ready!

Time: 20 minute prep time Serves: 8 25 minutes (oven) at 350 or 1-2 hours crock pot on low

Ingredients: 2 lbs. ground meat (my go to’s are either lean ground beef or ground chicken) 1/2 onion diced 1 (26 ounce) family size tomato soup or 2, 10.5 ounce cans of tomato soup 1, 10.5 ounce can of cream of chicken soup 1/3 cup brown sugar 1 lb. egg noodles 6-10 slices of American Cheese

Steps: 1. Boil water and cook noodles according to instructions on bag.

2. Dice and saute onions in small amount of oil

3. Brown your meat and drain fat from pan

4. In a large bowl combine brown sugar, tomato soup and cream of chicken soup

5. Add meat and noodles to the mixture and combine

6. Spray crock pot or casserole dish and add the mixture

7. Top with slices of American cheese

8. Bake covered with foil (I always use toothpicks to keep the foil tented above the cheese)

Oven: Bake 25 minutes covered. Crock Pot: Cook on low 1-2 hours.
